Finding Success With Low Carb Diets

Several years ago my wife and I decided that we should both lose some weight. At the time of our decision to take on the weight loss territory, low carb diets were all the rage. I have battled weight gain my whole life, but my wife has only started to add a few pounds as she approaches middle age. I thought it may be beneficial to go on a diet with the person I live with. Maybe this time I would keep my focus and stay on track.

Our Low Carb Diet Decision

We both enjoy protein foods so we decided to give the low carb diet a try. We decided we were not interested in counting calories or exchanging points — things that are required with other diets. Consuming meats, eggs, cheese and green vegetables would be cake, so to speak.

We purchased a book on low carb diets written by Dr AtkinsBook on low carb diets written by Dr Atkins and started the change to our lifestyle. Following the advice in the book, the first two weeks on our low carb diet were quite restrictive. The first thing I noticed with this diet plan was; I was not hungry. With all the previous diets I attempted, I remember watching the clock — with my stomach grumbling — until I could have my next meal or snack. With low carb diets you can have a piece of string cheese or a hard boiled egg if you are feeling hungry.

For breakfast we ate eggs: fried, boiled or poached. For lunch we would usually have a chef salad with ranch dressing and for dinner we would have fish, poultry, beef or pork with green leafy vegetables and steamed green vegetables. We discovered the delight of having different types of cheese for dessert.

In the Atkins book there are several recipes. My wife made the low carbohydrate cheese cake and we both loved it. We also discovered some flat bread that was low in carbohydrates and high in fiber — perfect with our dessert cheeses.

Our Low Carb Diet Entertaining

Entertaining was easy to do while we were on the low carb diet. We would barbeque steaks and prepare a huge salad. We served a variety of cheeses with flat bread and had the low carb cheese cake for dessert. Our guests were unaware that they were eating and enjoying our diet foods.

In the first month my wife lost eight pounds and I lost twelve. After three months my wife reached her goal weight and started adding a more foods to her diet. I continued on with the diet for three more months to reach my goal. We both felt better and looked great.
