Top It Off
Topping can also be used to add flavor to this treat. Try toasting some of your favorite nuts in the oven for several minutes. Chopped almonds, peanuts or my favorite, walnuts, all do the job well for this. When you've removed them from the oven and have let them cool, you can add them as topping to your low carb cheesecake. If it's the traditional fruit topping you prefer, small amounts of berries can be used as well. Use fresh or unsweetened frozen berries. Don't add additional sugar to them if you are counting your carbs.
You can even omit the crust if you want to eat something with even fewer carbs. When you do it this way be sure and grease the pan well with butter. Like all desserts of this type, a low carb cheesecake should bake in a medium oven for at least an hour. When it’s done it'll last for a week in the fridge.
Is It Right For You?
It’s also important to note that many foods used on diets like Atkins and South Beach are higher in fat. If someone's been told to eat foods lower in fat because of health related issues, a low carb cheesecake may not be a good choice.
